This must be some sort of record! You must be so proud.
So, I made the Beef Stroganoff recipe last night. Hubby didn’t love it but he’s never liked noodle casseroles so I wasn’t surprised but he did have two helpings of it so it wasn’t terrible. Personally, I liked it and it was something different so here’s the recipe:
- 1/2 lb lean ground beef (we use the 93/7 kind so it’s not greasy)
- 1/4 onion -finely chopped (I used a little dried onion soup mix instead or you can use dried minced onion)
- 1 can mushrooms stems and pieces – drained (this is cheaper but you can use fresh if you’re snooty)
- 1 can cream of mushroom soup
- 1 tbsp worcestershire sauce
- 1 teaspoon minced garlic (if desired)
- 1/2 cup milk
- 1/2 cup beef broth
- 1/2 cup sour cream
- salt and pepper to taste – use lots of pepper (it’s a rule)
- 1/2 bag of egg noodles
Brown the hamburger in a large skillet with worcestershire sauce, garlic and onion over medium heat until cooked through. Add salt, pepper (remember lots) and mushrooms. Cook for 5 minutes. Add mushroom soup, milk and beef broth and let simmer. Start the noodles at this point which will allow the meat mixture to simmer about 10 minutes. Once noodles are cooked (do not overcook), drain and return to pot with 1 tablespoon olive oil or butter to coat. Mix sour cream into meat mixture. Stir thoroughly. Spoon meat mixture over the noodles and serve with garlic bread or other toasty bread and with a salad.
It was really easy and I had almost all the ingredients on hand which is always a plus. I thought it was very yummy and will be having it for lunch today in about 30 minutes. The recipe I followed didn’t call for milk or broth but it was too thick without them. I wanted more gravy consistency so whatever floats your boat you can try.
Hubby and I also went to the grocery store last night. We’ve finally nailed down a system that works for us. No more going to the grocery every 2 months, having the cart rounded over the top so full if we took a corner too fast it would all spill out and spending hundreds of dollars and throwing a lot of it away. Nope – those days are done! Now we make a list of the meals we’re going to cook for that week only, we make a list of ingredients we need to make those meals, I grab the coupons and we take a food envelope with cash in it and off we go. We were only there about 30 minutes last night and only spent $50.56. I know it’s only the two of us but that’s not bad. We’ve also started a new deal – I put the groceries away while Hubby changes the cat litter. I LOOOOVE it. For some reason I detest changing the cat litter but Hubby doesn’t mind. He hates putting the groceries away so it really works well for us.
